Allan’s favorite food is pizza. If I agreed, we would eat pizza every day for every meal. To satisfy Allan’s cravings, Friday night is pizza night.
Every couple months I make a big batch of whole wheat pizza crust and freeze it in single serving dough balls. Then on Friday mornings I simply pull a dough ball out of the freezer and let it thaw in the fridge.
However, two weeks ago we ran out of pizza dough. I didn’t have time to make a new batch of dough and I didn’t want to pay an arm and a leg for pre-made dough that wasn’t 100% whole wheat. So, while at the co-op I spotted this sprouted grain baguette.
It’s hard to read the ingredients, but this was a typical sprouted loaf with red wheat berries, oat groats, rye berries, barley, corn, rice, millet and wheat.
I cut the loaf into thirds and then cut it lengthwise into 6 equal pieces. I then placed the bread cut side up on a baking sheet and put it under a preheated broiler for 5 minutes.
Then we added the toppings: pizza sauce (Trader Joe’s is our favorite), local organic part-skim mozzarella, sliced mushrooms, green olives for him and red pepper and onion for me.
We enjoyed our French Bread pizzas with a large salad of romaine, cherry tomatoes and red pepper dressed in Olave, EVOO, himalayan salt and pepper.
This was a super easy and delicious supper. Perfect for a weeknight meal.

I am a member of the choir at our church and we are recording a CD tomorrow. On Sunday we will be spending quality time with both of our Moms.
