I am hoping to have a Thanksgiving recap post up with updated photos and recipes early this week – hopefully no later than Wednesday. My goal was to get it up for you today, but we have a showing tonight that I must get the house ready for and Matthew just went down for his nap. On top of that I woke up feeling sniffly. No workout today. No Thanksgiving post. Sometimes life just gets in the way… 🙂
Instead of a Thanksgiving recap post, I am going to share a few ideas of what to do with your Thanksgiving leftovers.
Usually turkey and cranberry sandwiches reign supreme. However, I prefer to make quesadillas. Simply substitute turkey for the chicken in my Chicken Black Bean Quesadillas. If you made turkey stock from your turkey bones and drippings, you need to try Turkey Tortilla Soup – it is amazing!
Leftover sweet potatoes and squash are delicious on their own, but I really like adding them to pancakes and waffles. The resulting breakfast is thick and hearty. Remember that you can easily substitute pureed sweet potatoes or butternut squash for pumpkin in any recipe. Allan and Matthew cannot get enough of my Soaked Sweet Potato Waffles, Pumpkin Pancakes and Pumpkin Donuts.
If you have leftover canned pumpkin in your fridge a Pumpkin Breakfast Bake will warm your morning – perfect with a hot mug of coffee or tea and a Sunday newspaper.
Our favorite Thanksgiving side dish is stuffing! I always make bread pudding/strata out of my leftover stuffing – it is truly amazing. Simply substitute 5-6 cups of leftover stuffing + additional bread for the loaf of sprouted bread in my strata recipe. I also substitute the veggies in the original recipe with those that I happen to have on hand after our Thanksgiving meal (spinach, peppers, mushrooms, carrots, onion, celery, etc.)
