Hard boiled eggs are a staple in any clean eating kitchen. Eggs are an excellent source of easily digestible protein and essential fat (especially Omega 3 eggs). Some days I simply grab a couple eggs and am on my way out the door. Other days I crave creamy egg salad.
Now, I am not talking about the overly mayonnaised, boring egg salad that you can pick up in the dairy case at the corner store. Quite the contrary, I crave a gourmet, flavorful egg salad that will knock my socks off. When you scroll down and see the recipe, you will notice that I did keep 1 Tb of mayonnaise in this recipe – without it, the recipe loses the necessary tang and sweetness that only mayo can yield. This is another extremely simple and quick meal that can be ready in a couple minutes and feed your crew for a couple days.
Matthew loved feeding himself the pieces of diced egg and all the while he was getting in lots of protein and fat.

Clean Eating Egg Salad
4 hard boiled egg whites, diced
5 hard boiled eggs, diced
3 Tb feta hummus
1 Tb organic olive oil mayonnaise
2 Tb low fat greek (or strained) yogurt
1/2 Tb dijon mustard
1 tsp pickle jiuce
sea salt, to taste
freshly ground pepper, to taste
In a medium-sized bowl combine all ingredients. Stir. Cover and chill for at least 15 minutes. Serve with celery and carrots, on crackers or as a sandwich with sprouted bread, romaine and dill pickle slices.
