A few weeks ago while Allan was traveling, Matthew asked if we could have something other than eggs for breakfast. See Matthew is a very smart boy. On the week days Allan makes breakfast for the family while I workout and get dressed for the day. Matthew knows that when daddy is making breakfast it will always be eggs, kale, mushrooms, red peppers, sausages and avocado. However, when Mommy makes breakfast anything is fair game.
One morning he requested french toast while I was already knee deep in egg making. So, I promised him that the next morning we would try our hand at a paleo french toast. The resulting breakfast was absolutely delightful and is sure to please!
We loved this recipe so much that we made it twice in one week. The first time using this paleo bread topped with homemade blueberry jam and the second time we used pumpkin bread topped with pumpkin butter. The pumpkin bread really took the fall flavor over the top.
Also, don’t throw away any remaining egg mixture! Scramble it up and serve it alongside your french toast. I actually make 1 1/2 batches of the egg mixture to ensure that I have extra eggs to scramble.
Pumpkin French Toast
Adapted from French Toast with Grilled Bananas

Ingredients
- 1 loaf paleo bread, cut into 8 pieces
- 5 eggs
- 1/2 cup full-fat coconut milk
- 1/2 cup water
- 1/3 cup pumpkin, canned or freshly roasted
- 1 tbsp cinnamon
- 1 tsp pumpkin pie spice
- 2 tsp vanilla extract
- pinch sea salt
Instructions
In a 9×13 pan whisk together the eggs, coconut milk, water, pumpkin, cinnamon, pumpkin pie spice, vanilla and sea salt.
Preheat a cast iron pan to medium heat with 1 tbsp coconut oil.
Place bread in the egg mixture and allow to soak for at least 1 minute per side.
Pan fry each slice of bread for 2-3 minutes per side until golden brown. Adding additional coconut oil to the pan to prevent sticking. To speed up this process use two pans.
Scramble any remaining egg mixture. It is a delicious source of protein!
I have used paleo pumpkin bread in place of the bread in this recipe and it exquisite!
