It has been quite the eventful week around here and it’s only Tuesday!
Matthew and I have been checking things off our list left and right… including cleaning the house {finally!}, laundry {very exciting}, food prep {coconut butter, sunflower seed butter, peanut butter, larabars, pumpkin oatmeal protein bars, zucchini breakfast bakes, pumpkin pudding} and finally bought a compost bin and snagged some Missoni for Target {skirt and dishes!, really wanted a scarf!}.
You will notice that there are a few new recipes listed above – hopefully I can get around to posting each and every one of them very soon. Keep pumpkin and zucchini on hand!!!
Today you will need a can of pumpkin. 🙂
Pumpkin Pancakes
Lovely orange hued, protein packed pancakes with a hint of pumpkin and spice.
Makes 18 pancakes
3/4 c white whole wheat flour or certified gluten-free oat flour (for gluten-free pancakes)
1 c buckwheat flour (I grind mine from raw buckwheat groats)
1 1/2 c rolled oats
1/3 c protein powder
2 c lowfat plain or coconut kefir
1 tbsp coconut oil, melted
2 tbsp maple syrup
1 tbsp vanilla extract
1 1/4 tsp baking powder
1 tsp cinnamon
1 tsp pumpin pie spice
pinch sea salt
4 egg whites, lightly beaten
1/2 c canned pumpkin
In a large bowl combine flours, oats, kefir, coconut oil, maple syrup and vanilla. Refrigerate overnight. This step is not necessary, but is preferred for optimal digestion.
In the morning, whisk in baking powder, cinnamon, pumpkin pie spice, sea salt, egg whites and pumpkin. Do not over mix. If you did not let the oats and flour sit overnight, allow the batter to rest for 15-30 minutes to soften oats.
Preheat griddle over medium heat. Lightly oil the preheated griddle. Pour batter onto preheated griddle by the 1/4 c full. Flip when edges begin to set and bubbles form on the surface, about 2 minutes per side.
Top with applesauce, coconut butter, sunflower seed butter, unsweetened dried coconut, chia seeds, unsweetened jelly, maple syrup, etc.
