For a the last couple months, I have been making the most creamy, dreamy, decadent peanut butter for Allan’s lunches. You would not believe how unbelievably delicious and sweet this fresh peanut butter is compared to the pre-packaged varieties. And even better yet – it’s cheaper than Skippy!
So, here’s how it goes down in our house…
Trader Joe’s peanuts are less expensive than buying peanuts in bulk at the co-op, so when I am there I buy 4-6 of these 1-lb packages, which set us back $3.29/lb.
I then empty the bag of peanuts into the Vita Mix or food processor.
Turn it on and let it run for a few minutes. Scrape down the sides of the food processor or use the Vita Mix tamper, as necessary.
Let the food processor or Vita Mix run for 3-5 minutes. Until the peanut butter is buttery smooth.
No salt. No oil. Just delicious peanuts.
So simple. Crazy cheap. Peanut perfection.

What is your favorite seed, legume or nut butter?
I love peanut butter, but would really like to make a fun cashew butter or sunflower butter. Any suggestions?

Trader Joe’s is opening up in Kansas City TOMORROW and one of the things I’m excited for is cheaper nuts! (That doesn’t sound very good, ha, but I don’t know how else to say it π
