Today Matthew and I spent the afternoon cleaning for the two open houses and showing that are taking place this weekend. Since the weather warmed up, we have had a huge increase in showings and hope that coupled with this week’s price reduction will bring in the offers. Know anyone who is house shopping? It’s Friday, so you know what that means… pizza night!
However, tonight we will not be dinning on pizza. My mother-in-law graciously offered to watch Matthew, so Allan and I are taking her up on the offer. We have reservations at the new, highly praised restaurant, In Season. I can’t wait!
Just because we aren’t having pizza tonight, doesn’t mean that you can’t nosh on a new version of the classic pie. A couple weeks ago, I finally tried Socca Pizza.
I followed this recipe from HEAB, but substituted coconut oil for butter and added nutritional yeast and italian seasoning instead of onion and basil. I baked my crust in a cast iron skillet. Super simple! This pizza was topped with tomato paste, mushrooms, green peppers, onions, avocado and nutritional yeast. I didn’t miss the cheese at all.

Oh my friend, I know how hard all those showings can be. We put our house on the market 2 years ago – during the worst possible time of the housing market crash. It was sooo hard, especially with 2 dogs, and I cannot imagine doing it with a baby. All the cleaning and last minute showings, etc. There were many times when I ended up driving the dogs around and around the neighborhood until the potential buyers were gone. We ended up staying in Nashville and took our house off the market after about 8 months.

Thank you, Heather. The cleaning is really starting to really wear on me. But I know that it will be over soon and next year we will be in our very own brand new house and it will all be worth it. Until then, I will continue to pray for patience.
