Sorry for the delay in posting photos from Matthew’s party. We’ve been a little out of sorts over here, so I had a delay in getting the photos pulled together.
Last Sunday we celebrated Matthew’s 2nd birthday with family and friends. The following are some highlights from the party, including the party menu.
We started off the party with snacks and appetizers:
- Guacamole
- Strawberry Avocado Salsa
- Train Track Trail Mix
- Refrigerator Pickles
- Gluten-free Pecan Crackers and Cheese
- Watermelon
- Organic Salsa (from Trader Joe’s)
- Organic Blue Chips (from Target)
- Arnie Palmers for thirst quenching! (Half Homemade Iced Green Tea and half Simply Lemonade with lemons and fresh mint)
For supper we set up a build your own sandwich bar with lots of toppings including pea shoots, refrigerator cucumbers, tomatoes, lettuce, mayo, dijon and mustard.
We even picked up these cute sandwich cutters for guests to cut their sandwiches into transportation themed shapes.
Gluten-free sandwiches: ham and cheddar, herbed turkey and provolone, sun butter and jelly, peanut butter and jelly.
We also prepared the same assortment of sandwiches on sprouted Ezekiel bread.
A delicious salad topped with mango, strawberries, cucumbers, pea shoots, tomatoes and mango-strawberry dressing.
For dessert I made gluten-free chocolate and vanilla cupcakes with an ice cream split topping bar fit for a king that included homemade strawberry ice cream, cherries, sliced strawberries, sliced bananas and chocolate sauce.
