On Saturday afternoon we visited the Gardens of Eagan open house. Garden’s of Eagan is a 100 acre, urban-edge, organic vegetable farm that provides produce to several area co-ops and businesses. They also frequent a few farmer’s markets, including the Fulton Farmer’s Market.

We bought this bag for $10 & filled it with pick your own veggies (cukes, peppers, tomatoes, kale & basil)
Sunday afternoon was spent dicing and freezing lots of peppers, creating 3 different types of refrigerator cukes, making roasted tomato sauce and baking veggie lasagna.

That was such a fun day! I love the shot of you picking peppers. You look like a cute little farmer.
It looks beautiful. And everything taste so much better when it`s picked fresh from the garden/fields.
