We arrived home late last night, just in time for a big thunderstorm. Allan unloaded the car between downpours while I unpacked and put away the cooler with Matthew’s help.
After several hours in the car, we stopped in the cute town of Menomonie, WI to pick up supper. After doing some research on my iPhone, we found that Menomonie is the only town between Minneapolis and Marinette that has a co-op. We decided that the Menomonie Market Food Co-Op would be a great place to stop and eat on our way home. The co-op was quaint, just enough natural foods to get by. Definitely not as large and robust as the co-ops and Whole Foods that I am used to. Thankfully they had a small cooler full of fresh deli-made salads and sandwiches. The following is what we picked up…
Organic beets topped with homemade ranch dressing and walnuts. I did not care for this salad, the beets were still a bit crunchy and the dressing did not marry well with the earthy beet flavor.
Black bean and corn salad. The lime cilantro dressing on this salad was subtle, which I liked. However, it left me longing for more flavor. I think that the addition of jalapeno, chili powder and cumin would have helped.
I also picked up this loaf of gluten-free bread because it was on sale (and local). I tried a slice and it was subtly sweet, but the texture was a bit grainy. I thought that this would make the perfect base for my new amazing french toast recipe, which I will be posting about this week.
Allan had this amazing vegetarian lentil curry wrap. I MUST recreate this at home.
Since this vacation was extremely sudden, I was not able to prepare food for Matthew, so on our way out of town we picked up several different flavors of Happy Baby smoothies at Target. Matthew really liked all of the smoothie and veggie/fruit flavors that we picked up for him. We also bought a few of the Happy Baby dinners, which he did not like.
After paying for our food, we ventured across the parking lot to enjoy our deli finds on a park bench. Menomonie Market Food Co-op was located in a surprisingly gorgeous location – right across the street from Lake Menomin.
