This morning while cutting carrots for Matthew’s lunch, I sliced my thumb on my mandolin while talking to Allan instead of focusing on the job at hand. This is following trying to grate off the knuckle on my middle finger using a micro plane… I really need to be more careful.
Today Allan and I spent some quality time in Stillwater junking and picnicking.
I packed a Hugh Jass salad for two that we enjoyed on a park bench along the St. Croix river.
This was romaine + kale dressed in EVOO, balsamic vinegar, raw honey, sea salt and pepper topped with cuke, tomato, yellow pepper (first one from our garden), roasted beets and local feta cheese.
I also packed roast chicken, homemade bread, refrigerator cukes, red pepper, baby carrots and strawberries.
We are now watching Soul Surfer and munching on freshly popped corn with nutritional yeast and salt.
Tomorrow we plan to go on a family bike ride, work on a photo book of Matt’s first year and hang out as a family.
